This beer was the winner of our 2021 “Weird Saison” competition. It’s made with home-grown ground cherries for a gentle tartness and unique flavor!

Recipe Type: All-Grain
Recipe Size: 4 Gallon
Water
6 gal water (with minor mineral adjustment of medford tap water with 2 g calcium chloride, 2 g epsom salt, 2 gypsum) – Adjust pH after first 15 min of mash with minor lactic acid additions as needed (usually 1 ml)
Mash
- Pilsner: 3.7 lbs (Stone Path Prefered)
- Flaked Wheat: 0.8 lbs
- White Wheat Malt: 0.6 lbs
Mash in at 148 F for 75 minSparge with remaining water at 168 F (with 1 ml lactic acid for pH)
Boil
90 minute boil:
- Galena – 60 min – 0.33 oz
- Galena – 30 min – 0.33 oz
- Galena – 1 min – 0.34 oz
Fermentation
- House Culture propagated from bottle of Brasserie Vapeur Folie
Ferment at 76-79 F for 1 week
Secondary Fermentation – Transfer saison onto 1 lbs of ground cherry puree (home grown ground cherries mashed and pasteurized on the stove top, cooled in fridge and then added to secondary fermenter). Ferment for 2 weeks at 73 F (monitor gravity for end of secondary fermentation).
Garding – Condition 1 week at 47 F
