It was based on the Saison recipe from <em><a href=\"https:\/\/www.brewerspublications.com\/products\/brewing-classic-styles-80-winning-recipes-anyone-can-brew\">Brewing Classic Styles<\/a><\/em>, but with added lemon zest in the boil and fermented on strawberries. Sparge the grain with hot water (about 170\u00b0F), bringing the total volume up to 2 gallons. Stir in the malt extract and cane sugar.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Boil<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>1.75 oz Hallertau @ 60 minutes<\/li><li>2 oz lemon zest @ 5 minutes<\/li><li>0.75 oz Hallertau @ 0 minutes<\/li><\/ul>\n\n\n\n<p>Bring the wort to a boil and add the hops and lemon zest according to the schedule above.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Fermentation<\/strong><\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>2 packages White Labs WLP 565 (Belgian Saison I)<\/li><\/ul>\n\n\n\n<p>Chill the wort and top off with water until you hit 5 gallons volume, or the original gravity is right. Transfer the wort to a fermentor and pitch the yeast.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Other Ingredients<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>6 pounds strawberries<\/li><\/ul>\n\n\n\n<p>After a week of fermentation, transfer the beer to a clean fermentor and add the strawberries.
